Water is a universal tonic and detoxifying agent of its own kind. No liquid on earth can replace the cleansing actions of the fluid. Water should be used in as much quantity as possible to flush out the toxins from the body and add freshness to the skin and body.   • During air journeys, more water should be consumed by the passengers, pilots and the staff. Journeys in aeroplanes can cause dehydration because of the dry environment created inside the aeroplane. At least one glass per hour of journey is recommended by the health organizations.
  • Cold climates do not cause much sweating from the body and the metabolic rate of the body is not very high as well. So in the cold and dry places, four to six glasses per day are sufficient. But still that doesn’t mean that water should be completely avoided or its importance neglected in the colder areas.
  • People working in offices have a stationary type of job and they don’t have to roam about in the place. So, they do not need an increased supply of water throughout the day, however six glasses are necessary.
  • Another important point to be noted is that no matter now much water is taken in the form of beverages, fruits or other drinks, pure water has its own significance.

Plan a picnic

  1. Decide the place of picnic according to the number of people going. If the number of people is large, select a place which is nearer to your home where the maximum numbers of people show their interest to going to.
  2. If small kids are also going, prefer not to go to the sea shore.
  3. Check the weather condition before leaving for the picnic. It will prevent your picnic from being spoiled by rain or storm.
  4. If your picnic spot is at walking distance, pack your picnic items in back bags and use coolers with wheels to carry eatables.
  5. Picnic food should contain everyone’s favourite. It is better that everyone should prepare his or her meal, or at least tell their interest.

Coffee and caffeine are invariably linked. Just how bad is caffeine.. or coffee?

Today the use of coffee as a daily table beverage is widespread throughout the world and is probably the most widely consumed of all hot beverages. Broadly speaking it seems to have met a natural necessity or at least to have fulfilled a natural desire on the part of many millions of people.

The actual food value of coffee as brewed from the roasted and ground seed is practically nil. Dieticians would classify coffee as an auxiliary substance used mainly as a flavouring agent to food. And coffee is better known for its aroma and flavour and as a stimulant.


The characteristics flavour and aroma of coffee stem from small quantities of aromatic and volatile products which are released by roasting, an operation which many coffee lovers prefer to perform themselves. The stimulating effect of coffee is mainly due to the presence of caffeine, a substance that does not affect the odour and flavour of coffee.

Caffeine is an alkaloid substance which acts on the nervous system. A moderate amount of caffeine produces a mild exhilaration, a feeling of buoyancy and well being. Acting through the nervous system it increases the pulse rate, lightens the sense of fatigue and makes possible sustained or prolonged muscular exertion.

Acting on the brain centres, caffeine eliminates the feeling of tiredness and exhaustion. It stimulates the imagination, increases mental activity and quickness perception. Many people have discovered that drinking coffee makes it possible for them to carry on sustained intellectual work without any depressive after effect. There are however a great many individual differences in caffeine tolerance and in the quickness of response to caffeine. For some people an excessive dose of caffeine can bring on nervous excitation, trembling and insomnia.

Caffeine can also affect the heart. It tends to increase the rate and strength of the heartbeat by direct stimulation of the heart muscles. Excessive intake of caffeine however will cause palpitations and irregularity of the heartbeat.

Another effect that caffeine brings is that of a digestive stimulant and diuretic. The length of time for food to pass through the digestive system speeds up when coffee is taken. Coffee tends to stimulate the stomach to slightly increase the secretion of hydrochloric acid and to increase intestinal peristalsis.

Studies have shown that coffee taken in moderation is without harmful effects. It therefore becomes in part a question of quantity. Just what constitutes moderation depends on the individual, the strength of the coffee consumed and on its method of preparation. Careful studies have brought out the interesting fact that with coffee as with other types of food, there are personal or individual tolerances. A small percentage of the population responds unfavourably to caffeine stimulation and a still smaller percentage cannot use coffee without unfavourabe results, although they may be able to drink tea which also contains caffeine.

For those who are unable to tolerate caffeine there is decaffeinated coffee in which coffee beans are broken up by steam introducing chloroform or some other solvent and then eliminating this liquid by heating and roasting. After roasting, the coffee retains the same taste as ordinary coffee which has not been treated, but without having any of its stimulating properties.

Coffee whether it is percolated, infused, boiled or dripped will not make any difference in its caffeine content. But even after all that is said and done, lovers of coffee will agree that it is not the amount of caffeine present but the inherent soothing character of coffee that makes this brew so special and appealing.

Before giving some useful tips for preserving vegetables, I want to tell you a little about what you mean by preserving vegetables and why we preserve vegetables and other foods?

How to preserve Vegetables

Preserving vegetables means the process of storing vegetables for a longer period of time using different methods to prevent the vegetables from going to waste. Here are some commonly used methods of preserving vegetables:

Freezing Vegetables – This is the method of freezing vegetables in a refrigerator or cold storage

Dehydrating Vegetables – This is the second most popular method of storing vegetables and involves different drying methods such as dehydrating the foods or vegetables in sunlight or in the microwave oven.

Storing Cooked or Boiled Vegetables – The third method of preserving vegetables is a little professional and is used mostly by the food industries to store vegetables in metal cans with tight lids. Usually, the process involves boiling the vegetables in water with temperatures up to 140 degrees, before sealing them in cans. The vegetables can also be blanched, boiled, cooked, soaked in brine or other fluids for preserving them.

Why do we preserve vegetables?

In old times, people used to preserve vegetables and other edibles so that they could use them in time when there was no food available like in winters. But today, we usually preserve vegetables for two reasons:

Firstly to enjoy those vegetables in the season when they are not available like green peas are cultivated in winter and if you preserve them properly, you can enjoy them in June and July as well.

Secondly we preserve vegetables when large quantity is available and there are chances that they may spoil.

How to preserve vegetables

Here are some basic tips for preserving vegetables and by following them, preserving will become more easy and safe for a long time:

  1. To preserve vegetables, the most important thing is keeping every thing hygienic during preservation of vegetables.
  2. Remove a thin layer of vegetable’s skin before preserving it.
  3. Wash vegetables properly with lots of water.
  4. Cut vegetables into bite size pieces for freezing or canning.
  5. For dehydrating, cut vegetables into small pieces.
  6. Use plastic bags for freezing vegetables.
  7. Bags should be properly washed before adding vegetables to them.
  8. Mouth of the bags should be tightly closed.
  9. Put a small quantity of vegetables in each bag, so that whenever you need to utilize them, you use the whole bag.
  10. Once defrosted; if frozen again there are chances that vegetables may get contaminated.
  11. Vegetables can be easily defrosted by simply running luke warm water over them.
  12. The place where you are dehydrating vegetables should be clean and free from germs.
  13. If you are dehydrating vegetables under the sun, always cover them with a thin muslin cloth.
  14. Dehydrating in micro wave oven is hygienic but it takes more time.
  15. Using some salt on vegetables will make dehydrating faster and proper.
  16. Dehydrated food must be stored in a proper hygienic place covered with a tight lid to prevent air and moisture from entering the pot.
  17. Vegetables with a high acid level like tomatoes are recommended for freezing or canning rather than dehydrating.
  18. Vegetables with a low acid level should not be canned as they require a high temperature of more than 140 degree which is difficult to attain at home.
  19. Vegetables should be either cooked or boiled properly before canning.
  20. Tightly close the lids of cans once you have added the vegetables to them.
  21. A conscious check on preserved vegetables should be kept to make sure that they are not in contact with anything contaminated.
  22. For large number of vegetables, dehydrating under the sun is most convenient.
  23. Prefer using home preserved vegetables than market preserved one.
  24. For preserving, it is best to use young and tender vegetables.
  25. If you blanch or boil the vegetables, cool them immediately in the same amount of water, preferably ice water to preserve their nutrients.
  26. Make sure you use the best quality freezer bags or air tight containers to prevent freezer burn.
  27. Before freezing the bags, squeeze as much air out as possible.
  28. Label each bag with the name of the vegetable and the date of preservation, so you can use the old ones before using any newly preserved vegetables.
  29. Once packed, freeze them immediately.
  30. Make sure your freezer is already ready to take the preserved vegetables. You should clean it a day early and also set the freezer control at -10 a day before freezing to speed up.

There are other methods of preserving vegetables and fruits too, and include pickling and preparing jams and jellies.

General Cooking Tips

  1. Before slicing onions, put them into cold water for 10 minutes. This process will not make you “weep”.
  2. If you are cooking a dish which includes oil, tomatoes, green chili, onion and garlic, mix all the ingredients first and add garlic in last. It prevents the material from sticking with the pan and taste bitter.
  3. If you are boiling rice, add a few drops of lemon juice or vinegar to it. The rice will smell richer and look whiter.

  7. If you want to grill something, oil the grill slightly to prevent sticking.
  8. If you are using a grill with a top, cover it with it. This will allow smoke to enhance the flavour and make food yummier.

  10. Placing a toothpick between a pot and lid will prevent the pot from boiling over.

Basic Cooking Techniques

The most commonly used techniques in cooking are listed below:

Cutting refers to breaking food into smaller chunks, usually uniform in shape, such as vegetables, meat or making mince.

Chopping is a term used to refer to cut foods into pieces, such as cubes. Chopping is different from cutting by being a larger cut and it generally does not have to be uniform.

Sautéing is a cooking technique which means to fry food at moderate heat until it is soft and light golden brown.

Roasting refers to cooking in large amount of fats. The term usually applies on large parts of meat or joints but can also be used for vegetables.

Frying is the process of cooking food in oil and involves different methods including deep frying, shallow frying and stir frying.

Deep frying is the process of immersing food in large amount of fat or oil until the food cooks properly at moderate heat. However it is not recommended by dieticians as it is not good for health due to the high fat content.

Stir frying is to cook in a small amount of oil similar to sauté; the oil should be sufficient enough to cover the surface of the pan. This technique of cooking is used to soften the food. The technique is specially used in Chinese cuisine to stir fry vegetables.

Shallow frying requires frying food in pre-heated oil sufficient enough to cover one quarter to half of the ingredient (e.g fish/ poultry) being fried.

Barbecuing is the technique of cooking meat over red hot coals or a barbecue grill. The food is placed on barbecue braces just 8-10 cm over the hot coals to cook it quickly.

Poaching is cooking food in shallow water over a low flame.

Steaming means cooking food in the steam of boiling water. Water is filled into a steamer up to the marked level with a hot plate on the lid. The steamer is then put on high heat till water starts to boil. You can then put the vegetables or meat on the hot plate on the lid till it is cooked. For steaming, water should not be present in very large quantity and heat must be continuous all the time. Steaming preserves and promotes nutrients of food and is a highly recommended cooking technique. In case of excess water evaporation from the streamer before the food is tender and thoroughly cooked; replenish steamer with additional hot water supply.

Simmering involves cooking in liquids over a low heat till bubbling gently.

Boiling is the process of cooking liquids over moderate to high heat till bubbling rapidly.

Baking deals with cooking of various types of foods in an oven.

Blanching or parboiling is a unique method of cooking that is used to soften the food and also to stop it from going brown. It requires you to dip the food in boiling water for a little time which can then be transferred to chilled or iced water if required. This is mostly used to help get rid of bacteria and any other impurities on the food.

Broiling means to brown or toast the tops of food under direct high heat. Food must be kept 4-6 inches away from the source of heat.

Grilling is a method of quick cooking under radiant heat. This technique for cooking is about preheating the grill and placing vegetables, meat or food on a grill pan that must be 7-9 cm below the heating source. This is the best way to cook or soft vegetables.

Braising is a cooking technique in which the main ingredient seared or browned in fat and then simmered in liquid on low heat in a covered pot.

Whipping Cream

Whipping is the process of beating an ingredient vigorously, such as cream or eggs, to incorporate air until frothy.

Stewing is the process of cooking meat or vegetables by heating them slowly with oil and moisture in a tightly sealed or covered container.

Kneading is a term used for mixing dough by stretching and folding to help form gluten in the flour.

These are some of the basic cooking techniques and mastering them is easy. However, there are other specific cooking techniques which are specific to certain cuisines, like French, Italian, Chinese, Indian etc. By learning these basic cooking techniques, you can become a good cook and you will be able to handle most recipes.
